It’s the perfect day for Cookies!
Hey lovely readers,
It’s been awhile but I’m back….with a new spin on the classic chocolate chip cookie recipe!
Here’s what you’ll need to make Vanilla Pudding Chocolate Chip Cookies:
- 1 cup salted butter, at room temperature
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 3.4 oz. package vanilla instant pudding mix
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups semi-sweet chocolate chips (use Ghirardelli dark chocolate chips)
- Preheat oven to 350 degrees F.
- Using a mixer, beat together butter and sugars until creamy. Add in pudding mix, eggs, and vanilla extract. Stir in the chocolate chips.
- In a medium bowl, whisk together the flour, baking soda, and salt.
- Add the dry ingredients to the wet ingredients and mix until just combined.
- Refrigerate dough for a day before baking (optional). Drop cookie dough by rounded tablespoons onto a baking sheet. Bake for 10-12 minutes, or until slightly golden and set. Remove cookies from the oven and let finish baking on the baking sheet for two minutes.
Feel free to substitute butterscotch, chocolate, cheesecake flavor, etc for the vanilla pudding mix. I personally love the standard vanilla but you literally can’t go wrong with dessert experiments. I’d love to hear how your cookies turn out (leave a comment below)!
